In honor of my birthday, I’m turning my favorite dessert into a waffle. Now, I can enjoy this yummy treat for breakfast and no one can say a thing! And, of course, there must be a sweetened cream cheese drizzle. Is there any other way?!?

Grated Carrots
Butter
Brown Sugar
Milk
Egg
Gluten Free Flour Blend
Baking Powder
Cinnamon
Pumpkin Pie Spice

Can I make gluten free waffles dairy-free?
Absolutely! I often use almond or oat milk. You can also use vegan butter instead of real butter.
Why are my waffles sticking?
- Before cooking, spray the waffle iron liberally with nonstick cooking spray.
- If it says nonstick, still spray liberally with nonstick cooking spray.
- It’s possible the waffles have not finished cooking yet.
What brands of waffles are gluten free?

In general, while it may have a few added nutrients, carrot cake is not a health food. There are ways to make it healthier, yet still sweetly satisfying! These gluten free carrot cake waffles are a healthier way to enjoy your favorite cake for breakfast!

Gluten Free Carrot Cake Waffles
Ingredients
- 1 Tbsp. butter, melted
- 3 Tbsp. brown sugar
- 1 medium carrot, grated
- 1/2 tsp. vanilla
- 3/4 tsp. pumpkin pie spice
- 1/2 tsp. cinnamon
- 1 tsp. baking powder
- 1 c. milk
- 1 egg
- 1 c. gluten free flour blend (I used oat, almond, and tapioca)
Cream Cheese Drizzle
- 4 oz. light cream cheese
- 1 - 2 Tbsp. milk or cream (can use dairy free)
- 2 Tbsp. powdered sugar
Instructions
- In a medium bowl or large measuring cup, whisk all of the ingredients. If needed, add a little more milk until mixture is pourable, but a little thicker than pancake batter. Heat a waffle iron according to directions. Next, spray with cooking spray and cook according to waffle iron directions.
- GLAZE: In a medium mixing bowl, beat the cream cheese until smooth. Then, beat in the milk/cream and powdered sugar. Pipe or drizzle over the waffles.
