I was all set to make a crustless quiche. But then, I remembered this can of crescent dough in my fridge. And, I really don’t like to let things go to waste…
Ok, so it might not be gluten free…but, this is a great way to make a fun and fancy-looking breakfast or brunch! A welcomed change from the usual pie crust- those flaky crescent layers give a little something extra to this already pinkie-raising-worthy dish.
I’m still waiting for some company to create a good, gluten free crescent roll alternative. I mean…we’ve made a vaccine in less than a year and sent a man to the moon. So, I maintain hope that it is possible…
Someday. Right?!? In the meantime, we can serve this dish to our gluten-tolerating counterparts and then stare at them with envy…

Once you master the basic elements, the possibilities are endless!
Crust: premade pie crust, pretzel dough, won-ton wrappers, none (crustless)…
Meat: bacon, ham, sausage, crab…
Veggies: broccoli, onion, peppers, asparagus, tomatoes, mushrooms, spinach, kale, scallions, parsley, chives…
Cheese: cheddar, pepper jack, American, goat, gruyere, feta…
How is quiche different than a frittata?
Quiche is a French tart. It starts with a pastry crust and is then filled with a savory custard- cheese, meat, seafood, and/or vegetables. As a simple answer, a frittata is like a quiche, but without the crust. Quiches are baked, while frittatas are often started in a skillet and then baked.
Can I make this quiche gluten free?
Unfortunately, I have never been able to find gluten free crescent dough. You would need to make your own gluten free dough or try a premade mix.

Crescent Roll Quiche
Ingredients
- 1 pkg. refrigerated crescent dough
- 1 c. broccoli florets
- Olive oil
- 1 medium bell pepper, diced
- 2 - 3 oz. ham, diced
- Salt and pepper
- 4 eggs
- 1/2 c. milk (can use dairy free)
- 1/2 - 3/4 c. cheddar cheese, shredded
Instructions
- Preheat the oven to 375 degrees. Grease a 9x9 baking dish. Then, cut and press dough to cover the bottom of the pan and about an inch going up the sides of the pan. Set aside. Then, bring a small pot of water to a boil. Add the broccoli and cook for about 3 minutes. Next, drain, allow to cool, and chop into smaller pieces.
- Heat a medium skillet with about 1 Tbsp. of olive oil. Sauté the diced peppers and ham for 3-4 minutes, over medium-high heat. Season with salt and pepper. Then, add the broccoli and sauté for 2-3 minutes. Spoon mixture over the dough.
- In a medium bowl, whisk the eggs and milk. Pour over the vegetable mixture. Next, sprinkle with shredded cheese. Bake for 20-25 minutes, until eggs are set. Allow to cool before slicing.
