Let me be the first to say- I do not love bananas as part of a dessert!
Now, I love a nice, ripe, yellow banana, especially with peanut butter. And when frozen, they add great texture to smoothies. And OK, maybe one time I ordered bananas foster or something equally as fancy at this restaurant; but, banana desserts are typically a unicorn in my world. So, I’m not sure if I’ve actually ever eaten a banana split, but this is a version I can fully get behind!
10 minutes + freezing time
Banana Split Bites
Ingredients
- 1 c. heavy cream
- 1 tsp. vanilla
- 1/4 c. powdered sugar
- 2 medium bananas, sliced
- 2 individual containers of strawberry Greek yogurt
- 4 - 5 Tbsp. chocolate chips, melted
- 4 - 5 Tbsp. caramel sauce or peanut butter chips
- Optional: cherries, mini chocolate chips, sprinkles, etc.
Instructions
- Beat the cream and vanilla until stiff peaks form. While beating, add the powdered sugar slowly. Then, scoop whipped cream into a piping bag
- Line about 20 mini muffin cups with liners. Place a slice of banana in each well. Next, spoon strawberry yogurt over the banana. Then, top with melted chocolate, caramel sauce, and/or peanut butter chips. Pipe whipped cream over each bite. Decorate with cherries, mini chocolate chips, sprinkles, etc. Finally, freeze until ready to serve.
Notes
Leave bites sit out for about 5 minutes before serving (otherwise, bananas will be frozen and difficult to bite into.)
