Growing up, my mother was not known for many dinner specialties, but she did enjoy making her own meatloaf. She never followed one tried-and-true recipe…oh, no. She liked to mix it up! I even recall canned green beans making an appearance once or twice. To this day, I don’t think that my sister has ever fully recovered.
Well, this is not your mama’s meatloaf! And certainly not my mama’s…
The grated onion helps the mixture to stay moist, especially when choosing a leaner cut of meat. And with a few simple ingredients- like scallions, Sriracha, sesame oil, and ginger- the flavor is out of this world!
Or if you’d like dinner to be ready in 30 minutes, simply turn the mixture into meatballs!

Asian-Style Meatloaf
Ingredients
- 1 slice gluten free, whole grain bread
- Olive oil
- 1 lb. ground turkey, chicken, or grass-fed beef
- 1/4 small onion, grated
- 1 large clove of garlic, minced
- 2 small scallions, finely diced
- 2 Tbsp. coconut aminos
- 2-3 tsp. Sriracha
- 1/4 tsp. fresh ginger, finely grated
- 1 tsp. sesame oil
- 1 egg
- GLAZE
- 1 Tbsp. coconut aminos
- 1 Tbsp. orange juice
- 1 tsp. Sriracha
- 1 tsp. brown sugar
- 1/8 tsp. ginger, finely grated
Instructions
- Set the oven to low broil. Brush top of bread with olive oil. Then, broil for 4-6 minutes per side, until golden brown. Tear up pieces and grind in a small food processor.
- In a medium bowl, combine the bread crumbs, ground meat, onion, garlic, scallions, coconut aminos, Sriracha, ginger, sesame oil, and egg. Season with salt and pepper. Then, use clean hands to mix. Next, form into a loaf. Placed on a greased baking sheet or loaf pan.
- Reduce the oven to 350 degrees. Bake for 55 minutes. Meanwhile, whisk the coconut aminos, orange juice, Sriracha, brown sugar, and ginger in a small bowl. Then, remove the meatloaf from the oven and brush glaze over the top. Next, bake for an additional 5 minutes. Again, brush glaze over the top. Garnish with chopped scallions.
