Gluten Free Lemon Baked Oatmeal

Ingredients
  

  • 2 Tbsp. butter, melted
  • 1/2 c. applesauce
  • 2 Tbsp. maple syrup or sugar-free sweetener (or 1/4 c. sugar)
  • Zest of 1 lemon
  • 2 Tbsp. lemon juice
  • 2 eggs
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 scoops vanilla protein powder (or 1/4 c. gluten free flour blend)
  • 1 1/4 c. milk (can use dairy free)
  • 2 c. old-fashioned or rolled oats
  • 1/2 - 3/4 c. white chocolate chips

Lemon Drizzle

  • 1 Tbsp. butter, melted
  • 1 Tbsp. lemon juice
  • 1/3 c. powdered sugar

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, whisk the melted butter, applesauce, maple syrup, lemon zest, lemon juice, and eggs. Then, whisk in the baking powder, salt, and flour or protein powder. Carefully whisk in the milk. Next, fold in the old-fashioned or rolled oats and white chocolate chips.
  • Scoop about 1/4 cup of batter into 12 lined muffin cups. Then, bake for 30 minutes. You can also bake in a rectangular baking dish.
  • LEMON GLAZE: In a small bowl, whisk the melted butter, lime juice, and powdered sugar. Add a little more liquid or powdered sugar, until a thick glaze forms. Then, use a spoon to drizzle over the oatmeal. Or you can melt about 1/4 - 1/3 cup of white chocolate chips and drizzle over the oatmeal cups.
