Easy Gluten Free Soft Pretzels

With no yeast or rising time required, these easy gluten free soft pretzels make a soft and chewy treat, ready in about 35 minutes!

- 1 c. gluten free flour blend (with xanthan gum)
- 2 tsp. baking powder
- 3/4 tsp. salt
- 1 c. plain Greek yogurt
- 2 Tbsp. baking soda + 6 cups of water
- 1 Tbsp. butter, melted
- Pretzel salt
In a large mixing bowl, whisk together the flour, baking powder, and salt. Then, beat in the Greek yogurt. Next, carefully knead, while adding up to 1/4 cup of more flour, if needed. Dough should be just slightly sticky.
Preheat the oven to 375 degrees.
Separate dough into even-sized pieces. You can create small soft pretzels or mini soft pretzel bites. Roll and shape dough as desired.
Heat a large pot, filled halfway with water, to a boil. Stir in the baking soda. Carefully place the pretzels in the water. Allow pretzels to boil for 1-2 minutes (one minute for small bites.) Leaving them in for too long could result in a metallic taste. Remove with a slotted spoon.
Place the pretzels on a lined baking sheet. Brush with the melted butter. Then, sprinkle with the pretzel salt. Finally, bake for 18-20 minutes, until golden brown. If desired, brush with any remaining butter.
