In a large skillet, heat 2 Tbsp. of olive oil over medium heat. Then, combine the chicken, salt, pepper, and almond flour in a large bowl. Use clean hands or a spoon to mix well. Add the chicken to the skillet and cook until browned, about 8-10 minutes. Flip once after the bottom has browned. Remove and set aside.
In the same skillet, heat 1 Tbsp. of olive oil. Next, sauté the peppers over medium-high heat for 5-7 minutes. Season with salt and pepper. Remove and set aside. Then, sauté the zucchini, seasoned with salt and pepper, over medium-high heat for 7-8 minutes. You could also air fry the zucchini, if desired. Add the peppers back to the skillet and stir to combine.

In a small saucepan, heat the butter until melted. Then, whisk in the honey and hot sauce.
In serving bowls, layer the rice, sautéed veggies, and chicken. Then, use a spoon to drizzle the hot honey sauce.
