Gluten Free French Toast Casserole

Ingredients
  

  • 1 loaf of gluten free bread
  • 2 c. milk (can use dairy free; can replace some of the milk for half-and-half or cream)
  • 2 Tbsp. maple syrup (I used a monk fruit version)
  • 2 Tbsp. butter, melted
  • 6 eggs
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 1/2 tsp. pumpkin pie spice

Instructions
 

  • DRY OUT BREAD: Preheat the oven to 300 degrees. Cut or tear the bread into cubes/rectangles. Spread out on a sheet pan and bake for 8-10 minutes, until dried. Allow to cool.
  • Grease a 9x13 baking dish. Then, add the bread to the dish. Next, whisk the milk, maple syrup, butter, eggs, vanilla, cinnamon, and pumpkin pie spice. Pour liquid over the bread, making sure to cover each piece. Then, cover and refrigerate for 2-12 hours.
  • Preheat the oven to 350 degrees.
  • Allow the baking dish to sit on the counter for a few minutes before placing in the oven. Bake covered for 20 minutes. Then, remove the cover and bake for an additional 25 minutes.
