These loaded zucchini bites are stuffed with an Italian ground turkey mixture, then topped with cheese and basil. Perfect for a low carb dinner or snack!
Meanwhile, cut each zucchini in half lengthwise. Then, cut each into 3 pieces (6 pieces per zucchini.) Use a small spoon to scoop out the center with seeds. Brush with olive oil and season with salt and pepper. Next, place on a baking sheet and bake for 7-10 minutes, depending upon how soft you'd like the zucchini.
Remove from the oven. Then, spoon turkey mixture into each well. Top with mozzarella and oregano. Return to the oven for 5-8 minutes, until cheese is melted. Garnish with basil before serving.
